The corn gives it a really good, sweet, summery flavor. The only change I made was substituting half the mozzarella for cheddar since that’s what I had on hand. I also found it needed a little longer in my oven than the recipe says. This is definitely going in my regular summer rotation!

I liked all the individual ingredients, but they just didn’t taste right together. Perhaps the fresh corn I bought was too sweet and I should have used frozen. The squash/egg part was good, but the kernels of corn were just jarringly sweet when combined with the other savory items in the dish. I’m eating the pie I made, but I won’t make it again as written; I may make it without the corn.

I do think I needed to cook it a smidge longer or cut my carrots and potatoes a little smaller than indicated in the recipe pictures. I also subbed the green beans for semi thawed broccoli, which worked out great. I did cut some of the larger pieces in half but most were kept as is. Kids wouldn’t eat it but I am feeding toddlers sooooo you know…..it’s no easy feat.
